WHAT DO YOU LOVE MOST ABOUT WHAT YOU DO? It’s hard to pick just one thing I love about what I do. The people I work with, the guests I meet, the food, the daily challenges of operating and growing multiple venues.

DESCRIBE A DAY IN THE LIFE OF YOU? Everyday is completely different from the last which is why I love it. Mostly they start with checking emails from the previous day and planning my day, visiting the restaurants, meeting with my team and suppliers, serving guests, testing new menu items and finishes with a few more emails. J

WHAT ARE YOU PASSIONATE ABOUT? I love food, working with passionate and energetic teams and creating a place where people love to be.

WHAT’S YOUR LIFE PHILOSOPHY? People don’t care how much you know until they know how much you care – its all about doing the right thing by people and making them feel good about themselves.

YOU ARE TURNED INTO A BIRD, WHAT BIRD WHAT THAT BE? Pelican – cruising around with friends at the beach eating the freshest seafood in the sun.

IN AN ALTERNATE UNIVERSE, WHAT WOULD YOU BE DOING? Something in health and fitness – maybe a health food café and yoga studio with an outdoor fitness centre at the beach would be cool.

WHERE IS YOUR FAVOURITE HOLIDAY DESTINATION? Locally I love Noosa, Internationally and not too far is Bali, and if there’s no time restrictions I love the south coast of Italy around Amalfi and Positano.

NEXT EXCITING THING FOR ME IS: We are working on three new venues for 2016. One in Brisbane, the Gold Coast and Sydney. Its going to be a crazy busy year and I can’t wait!

MORE: I grew up in Brisbane however just returned form 3 years working in restaurants all across Melbourne. I moved back to open Corbett & Claude and Mr Claude – I’m loving being back.
